Tasting notes: Sweet and smooth, notes of baked banana and coffee
The beans: Sourced from deep in the Peruvian Amazon rainforest from a female led community who champion exceptional native cacao from remote territories. Cultivated by the 150 members of the Chinim Wawas community in Bagua under the leadership of their chief APU Qhetelbina Awanash using a natural agroforestry method without any chemical inputs. Once harvested the cacao is passed to the team at Cacao Nuestro for fermentation and drying, using their technical expertise to preserve the delicate aromatics of the cacao. The team of 11 led by Whitney and Angelica are committed to precision fermentation and full traceability across their supply chain.
