The beans: Grown by Jose Maria Pascacio on his family farm in Chiapas, Mexico. These beans are the Porcelana Blanca varietal with a uniquely pale appearance, resulting in a bar of chocolate that looks incredibly light. Jose was awarded a gold at the Cacao of Excellence Awards in 2021 for these beans.
