Tasting notes: Light and delicate with notes of rose and lychee.
The beans: Tomé-Açú in the north of Brazil is currently gaining attention as the home of agroforestry, encouraging small-scale, non invasive planting of crops to preserve the forest rather than clearing it for large scale farms. This cacao is grown by Francisco Sakaguchi, who's father Noburo came to Tomé-Açú in 1957. Initially intending to farm rubber trees and pepper, Noburo soon dedicated himself to biodiverse planting and reforestation. The 50 ha of Fazenda Sakaguchi is now home to a wide range of crops including coffee, spices and more than 80 varieties of fruit. Today, Francisco is the heir to this natural agriculture, allowing him to avoid using chemicals and to take advantage of nature's influence on his cacao.
