Tasting notes: light and delicate, floral notes with a citrus finish
The beans: The Qori Warmi Cooperative is based in the Vraem region of Cusco, Peru, an area well known for its incredible cacao and enormous geographical and ecological diversity. The Qori Warmi Cooperative was formed in 2017 with the goal of raising a legal income through the farming of cacao. The 130 members of the Cooperative are primarily women who have taken over the running of their family farms after losing family members to illegal activities, and the name of the cooperative translates to “women are worth gold”.
The varietal of cacao cultivated by the cooperative was selected for its unique, delicate flavour profile, and by using strictly controlled post harvest practices at a central fermentation station the incredible flavours are preserved.
